Chicken Biryani

An iconic Indian classic, Chicken Biryani is a fragrant medley of tender, marinated chicken and long-grain basmati rice slow-cooked with layers of aromatic spices, saffron, and caramelized onions. Cooking Instructions

STEP 1
Mix all marinade ingredients together: yogurt, ghee, minced garlic, grated ginger, salt, cumin powder, coriander powder, red chili powder, lemon juice and Hyderabadi Biryani Masala. Next, clean and cut your chicken thighs into 1.5 inch chunks, and add the chicken to the marinade. Let the chicken marinate for at least 2 hours, or overnight.

STEP 2
Wash the rice till the water is completely clear. Strain the rice and leave on the side. To a pot add 3 tbsp of ghee and heat on high. When the ghee is hot add your rice and sauté the rice till it's evenly coated with ghee. Turn off flame and add your water and salt. Stir everything and cook on medium heat for 45 minutes (stir occasionally to prevent rice sticking to the pot). Once the rice is cooked add the last tbsp of ghee and stir gently.

STEP 3
Remove the rice and let it rest on the side. In the same pot add 4 tbsp of ghee and heat on high until the ghee is hot. Add cumin seeds and cook for 30 seconds. Add minced garlic and sauté till golden. Add onions and cook until caramelized.

Next remove the chicken chunks from marinade and add to a new pot. Cook on high heat, stirring frequently until the marinaded chicken is cooked. Make sure yogurt is cooked and semi caramelized. Turn off flame.

Add the rice to the chicken pot and stir together. Garnish with cilantro and fried onions. Serve and enjoy!
